Colorful fruit pizza with cream cheese, fresh fruit, and a buttery cookie crust topped with pineapple juice glaze for a sweet finish.
Ingredients:
  • butter-flavored cooking spray
  • 2 cups all-purpose flour
  • 0.5 cup confectioners' sugar
  • 1 cup cold butter
  • 1 (8 ounce) package cream cheese, softened
  • 0.33333334326744 cup white sugar
  • 1 teaspoon almond extract
  • 2 cups sliced fresh strawberries
  • 1 cup fresh blueberries
  • 1 kiwi, peeled and sliced
  • 1 cup unsweetened pineapple juice
  • 0.5 cup white sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly coat a 12-inch round pizza pan with butter-flavored cooking spray.
  • In a bowl, mix flour and confectioners' sugar. Add butter and blend with a knife or pastry blender until mixture looks like coarse crumbs. Press mixture into the pizza pan to form the crust.
  • Bake at the set temperature until lightly golden, approximately 12 to 15 minutes. Let it cool on a wire rack.
  • Mix cream cheese, 1/3 cup white sugar, and almond extract until velvety; smoothly spread over the cooled crust. Artfully place strawberries, blueberries, and kiwi on top of the cream cheese layer.
  • In a saucepan, combine pineapple juice, 1/2 cup white sugar, cornstarch, and lemon juice, stirring until smooth. Bring the mixture to a boil, then cook and stir until it thickens, approximately 2 minutes. Let it cool slightly and drizzle it over the fruit. Chill in the refrigerator until cold.
