Elevated chicken sandwich: Marinate chicken in ponzu, pineapple, garlic, ginger, herbs. Cook with onion, peppers, cabbage. Load on hoagie with Swiss cheese.
Ingredients:
  • 1 teaspoon brown sugar
  • 1 cup prepared ponzu sauce
  • 1 cup chopped fresh cilantro
  • 0.5 cup pineapple juice
  • 4 fresh mint leaves, chopped
  • 4 cloves garlic, crushed
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon chili oil
  • 3 skinless, boneless chicken breast halves, cut into chunks
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 jalapeno pepper, sliced
  • 1 small head cabbage, shredded
  • 4 Italian-style hoagie buns, split lengthwise and toasted
  • 12 slices Swiss cheese
  • 0.25 cup chopped fresh cilantro, divided
  • 1 tablespoon sesame seeds, divided
  • 1 tablespoon chile-garlic sauce (such as Sriracha®), or to taste - divided
  • 1 lime, cut into wedges
Instructions:
  • Preheat oven to a sizzling 500 degrees F (260 degrees C).
  • In a large bowl, mix together ponzu sauce, 1 cup cilantro, pineapple juice, mint leaves, garlic, fresh ginger, sesame oil, chili oil, and brown sugar. Add chicken and toss until evenly coated.
  • After marinating the chicken in the flavorful ponzu sauce, you'll work on creating a delicious base for your dish. Start by browning the chicken in a hot pot along with a fragrant mix of olive oil, onions, red bell pepper, and jalapeno for a burst of flavor. Cook until everything is tender and aromatic.
  • Bring the reserved marinade to a boil with the chicken, then add cabbage and cook until slightly wilted, about 4 to 5 minutes.
  • Carefully scoop the flavorful chicken mixture into the warm toasted hoagie buns and generously layer each sandwich with 3 gooey slices of Swiss cheese.
  • Arrange the sandwiches on a baking sheet and bake in the preheated oven until the cheese is melted and the buns are toasted, approximately 5 minutes. Top each sandwich with 2 tablespoons cilantro, a quarter of the sesame seeds, and a quarter of the chile-garlic sauce. Serve with lime wedges.
