Soba noodles with salmon & ponzu sauce

Whip up a vibrant and quick dinner tonight!
Ingredients:
  • 1 lemon
  • 2 x 150g pieces hot-smoked salmon fillet (see note)
  • 6 spring onions
  • 75g (1/2 cup) sesame seeds
  • 20.00 ml rice vinegar
  • 42.00 gm light soy sauce
  • 275g soba noodles (see note)
  • 300g frozen podded edamame (young green soybeans) (see note) or frozen peas
  • 2.50 gm caster sugar
  • 1 tsp sesame oil
Instructions:
  • First, bring a large pot of water to a boil. While waiting, remove the skin from the fish, break it into large pieces, and put it in a bowl. Cut the onions into 20cm lengths, chop them, and add them to the bowl.
  • In a small frying pan over medium heat, cook sesame seeds, stirring constantly, for 2 minutes until golden. Let cool in the pan until ready to use.
  • In a small bowl, squeeze fresh lemon juice, then mix in vinegar and soy sauce until well blended.
  • Add noodles to a pot of boiling water and cook for 1 minute. Then, introduce soybeans and cook for an additional 2 minutes or until both are tender. Drain, briefly cool under cold running water, and combine with the fish mixture.
  • Mix the sugar and sesame oil into the ponzu sauce, then combine with the noodle mixture along with sesame seeds. Toss everything together and serve warm or at room temperature.
