Elevate your dinner with Asian-inspired teriyaki salmon, soba noodles, and crisp green beans.
Ingredients:
  • 4 Salmon Skin On Portions
  • 80ml teriyaki marinade
  • 2 tsp sesame oil
  • 250g green beans, trimmed
  • 100g enoki mushrooms or shimeji mushrooms, ends trimmed
  • 5cm-piece ginger, peeled, cut into matchsticks
  • 270g pkt soba noodles
  • 2 spring onions, cut into matchsticks
  • Pickled ginger (optional), to serve
Instructions:
  • Place the salmon in a ceramic or glass dish. Pour the teriyaki sauce over it and ensure it is well coated. Cover with plastic wrap and refrigerate for 30 minutes for marination.
  • In a large frying pan over medium-high heat, heat half of the oil. Drain the salmon, saving the sauce. Cook the salmon for 2-3 minutes on each side, or until it reaches your desired level of doneness. Then, transfer to a plate.
  • Heat the remaining oil in a pan over medium-high heat. Add the beans, mushroom, and ginger. Stir and cook for 2 minutes until the vegetables are tender. Pour in the reserved sauce and bring to a boil. Let it boil for 1 minute.
  • Cook the noodles according to package instructions, then drain them.
  • Separate the noodles into individual serving bowls. Add the bean mixture, salmon, and spring onion on top. Enjoy with pickled ginger, if desired.
