Vibrant Asian-inspired salmon with nori and sesame soba noodles.
Ingredients:
  • 2 (about 800g) thick salmon fillets, skin removed
  • 2 sheets nori
  • 18.20 gm olive oil
  • 270g pkt soba noodles
  • 40g sesame seeds
  • 31.50 gm sushi soy sauce
  • 60ml sushi vinegar
  • 2 tsp sesame oil
  • 2 tsp finely grated ginger
  • 1 bunch asparagus, woody ends trimmed
  • 1 carrot, peeled
Instructions:
  • Cut the salmon into twelve 4 x 5cm pieces and season generously with salt and pepper. With sharp scissors, cut nori into twelve 2cm-wide strips. Finely shred the rest of the nori and keep it aside for garnishing.
  • In a large non-stick frying pan over high heat, sizzle the salmon on each side for 1-2 minutes until perfectly cooked. Then, wrap each piece in nori and plate for serving.
  • Boil the noodles in a large saucepan for 12 minutes or until tender. Rinse with cold water, drain well, and transfer to a large bowl. Combine sesame seeds, soy sauce, sushi vinegar, sesame oil, and ginger in a small jug. Pour the flavorful dressing over the noodles and mix well to combine.
  • With a vegetable peeler, create thin ribbons by slicing the asparagus and carrot lengthwise.
  • Place the asparagus in a bowl and cover with boiling water. Quickly refresh under cold water, drain well, and arrange on top of noodles with salmon and carrot. Sprinkle the remaining shredded nori for a finishing touch before serving.
