Pop's Blackberry Cobbler

Shiny berry cobbler with sweet syrup. Perfect with peaches, great with ice cream!
Ingredients:
  • 2 quarts blackberries
  • 3 tablespoons quick-cooking tapioca
  • 0.5 cup white sugar
  • 2 cups biscuit baking mix
  • 0.75 cup milk
  • 0.5 cup water
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and generously grease a 9x13-inch baking dish.
  • Combine the berries, tapioca, and 1/2 cup of sugar in a bowl, mix until well combined. Spread evenly into the baking dish. In another bowl, mix the baking mix and milk. Drop spoonfuls of the dough over the cobbler mixture.
  • Place the cobbler in the oven that has been preheated for 15 minutes.
  • In a small saucepan over high heat, boil water and 1/2 cup sugar. Stir in butter and vanilla extract, then simmer on medium-low for 5 minutes. Set aside. After baking the cobbler for 15 minutes, drizzle evenly with the vanilla syrup. Return to the oven and bake for another 5 minutes until the syrup evaporates from the cobbler topping.
