Broiled sardines with zesty lime-tomato sauce, a Filipino favorite served over rice.
Ingredients:
  • 4 tablespoons olive oil, divided
  • 0.5 teaspoon ground paprika
  • 0.25 large onion, diced
  • 0.5 teaspoon tomato paste
  • 1.5 cups halved cherry tomatoes
  • 0.5 cup white cooking wine
  • 0.25 cup water
  • 1 tablespoon fish sauce
  • 2 (4 ounce) cans sardines, drained
  • 2 limes, juiced, divided
Instructions:
  • Begin by warming 2 tablespoons of olive oil in an oven-safe skillet over medium heat. Sprinkle in garlic powder and paprika, and cook until fragrant, about 1 minute. Sauté the onion until it turns soft and translucent, around 5 minutes. Stir in tomato paste and continue cooking for another 1 to 2 minutes. Gently add cherry tomatoes and mix well. Cover the pan and simmer until the tomatoes start to release their juices, approximately 5 minutes.
  • While the tomatoes simmer, mix the remaining 2 tablespoons of olive oil with half of the lime juice. Add the sardines and coat them gently with the lime marinade.
  • Position the oven rack 6 inches below the broiler and preheat the oven's broiler.
  • Uncover the skillet. Combine cooking wine with onion and tomatoes; mix thoroughly. Pour in water and fish sauce; bring to a boil. Reduce heat and simmer until liquid starts to thicken, around 5 minutes.
  • Take the sardines out of the marinade and layer them on the tomato sauce, then dispose of any leftover marinade.
  • Broil until sardines are perfectly cooked and tomatoes are slightly charred, about 4 to 5 minutes.
  • Drizzle the leftover lime juice over the sardines before serving.
