Fluffy yeast bread with sweet honey-poppy seed filling, crunchy nuts, and zesty lemon.
Ingredients:
  • 5.5 cups all-purpose flour
  • 2 (.25 ounce) packages active dry yeast
  • 1.5 cups milk
  • 0.33333334326744 cup white sugar
  • 0.33333334326744 cup shortening
  • 1 cup boiling water
  • 0.75 cup poppy seeds
  • 0.5 cup chopped walnuts
  • 0.33333334326744 cup honey
  • 1 teaspoon grated lemon zest
  • 1 egg white
Instructions:
  • Combine milk, sugar, shortening, and salt in a saucepan and gently heat until warm.
  • In a large mixing bowl, combine 2 cups of flour and yeast. Stir in the warm milk mixture. Add 3 eggs and beat with an electric mixer on low for 30 seconds, scraping the sides of the bowl. Increase speed to high and beat for 3 minutes. Mix in as much of the remaining flour as possible. Turn the dough out onto a lightly floured surface. Knead in the rest of the flour until a stiff dough forms, then continue kneading for 6 to 8 minutes. Place the dough in a lightly greased bowl, turn to coat, cover, and let rise in a warm place until doubled.
  • Pour boiling water over poppy seeds, allowing them to steep for 30 minutes. Drain well and transfer to a blender. Grind until smooth. In a small bowl, combine the ground poppy seeds with chopped nuts, honey, and lemon zest. In a separate bowl, whip the egg white until stiff peaks form, then gently fold it into the poppy seed mixture.
  • Gently deflate the dough, then divide it in half. Cover and allow it to rest for 10 minutes. On a floured surface, roll out one half of the dough into a 24 x 8 inch rectangle. Spread half of the poppy seed mixture over the dough. Roll it up tightly, starting from the short end, ensuring the seam is sealed. Place the roll seam side down in a greased 8 x 4 inch loaf pan. Repeat the process with the other half of the dough. Cover and let the loaves rise for 30 to 45 minutes, or until doubled in size.
  • Simply bake at 350 degrees F (175 degrees C) for 35 to 40 minutes in a preheated oven.
