Adorable popcorn penguin, perfect for decorating or gifting!
Ingredients:
  • 12 cups popped popcorn
  • 1/4 cup butter or margarine
  • 1 bag (10 1/2 ounces) miniature marshmallow (6 cups)
  • 1/4 teaspoon peppermint extract
  • 2 candy canes
  • 6 ounces vanilla-flavored candy coating (almond bark), melted
  • 4 ounces chocolate-flavored candy coating (almond bark), melted
  • Betty Crocker™ Fruit Roll-Ups® strawberry chewy fruit snack rolls
  • Assorted candies, if desired
Instructions:
  • Separate out any unpopped kernels from the popped popcorn.
  • In a Dutch oven, melt butter and marshmallows over low heat, stirring constantly until smooth; remove from heat. Stir in peppermint extract and gently fold in popcorn until well coated. Allow to cool slightly before serving.
  • Form the popcorn mixture into a log, shaping it with buttered hands to create a 9-inch long and 4-inch diameter shape. Taper one end to a point for the tail, make the middle wider, and shape the other end to a point for the head. Mold additional popcorn for the feet and beak. Arrange candy canes on a buttered plate and place the penguin on top, with the curved ends of the candy canes facing up like skis. Gently press the popcorn mixture onto the candy canes.
  • Apply vanilla coating generously all over the penguin until completely covered. Chill briefly until the coating is firm. Then, generously brush on the chocolate coating for the penguin's outer layer. Create a cute hat and scarf using fruit rolls, and if desired, decorate them with a touch of vanilla coating. Finish off the penguin by adorning it with assorted candies. For microwave preparation: In a large microwave-safe bowl, combine marshmallows and cut butter pieces. Microwave on High for 1 minute, then stir. Microwave for an additional 30 seconds to 1 minute and 30 seconds, or until the mixture is smooth when stirred. Stir in the peppermint extract and proceed with the recipe as instructed.
