Satisfying pork, tomato, and bean soup - bursting with flavor and ready in no time.
Ingredients:
  • 700g jar tomato passata
  • 400g can diced tomatoes
  • 500ml vegetable stock
  • 400g can Mexican bean mix, rinsed, drained
  • 480g pkt Made Easy Slow Cooked Pork Shoulder with Apple & BBQ Sauce, meat only, coarsely shredded
  • 1/2 x 350g pkt Kaleslaw Kit
  • 1 lemon, zested
  • 62.50 ml chopped flat leaf parsley
Instructions:
  • In a large saucepan, mix passata, tomato, and stock. Bring to a boil over high heat, then reduce to medium. Add beans and pork, and cook for 5 mins until heated through.
  • Combine the salad mix from the kaleslaw kit with the pork mixture in the pan and cook for 1-2 minutes until everything is heated through. Season to taste.
  • Ladle soup into individual bowls and garnish generously with lemon zest, parsley, and seed mix from the kaleslaw kit.
