Creamy, flavorful curry, healthy and low-fat.
Ingredients:
  • 4.60 gm olive oil
  • 400g diced pork
  • 70.00 gm Green Curry Paste
  • 10.00 gm cornflour
  • 1 x 375ml can Light & Creamy Coconut Flavoured Evaporated Milk
  • 185ml (3/4 cup) salt reduced chicken style liquid stock
  • 1 x 400g pkt Stir-Fry Mix
  • 16.00 gm brown sugar
  • 12.20 gm fish sauce
  • 200g dried thin rice noodles
  • 50g (2/3 cup) bean sprouts, trimmed
  • 125.00 ml fresh coriander leaves
Instructions:
  • In a large saucepan over medium-high heat, warm the oil until shimmering. Add the pork and stir-fry for 2-3 minutes until lightly browned. Quickly add the curry paste and cook, stirring, for 10 seconds to release its aroma. Remove from heat.
  • In a medium bowl, combine cornflour and 60ml (1/4 cup) of evaporated milk until smooth. Mix in the stock and the rest of the evaporated milk.
  • Combine the evaporated milk mixture, stir-fry mix, sugar, and fish sauce with the pork mixture. Simmer over medium heat until vegetables are tender, about 5 minutes.
  • Cook the noodles in a large pot of boiling water for 6 minutes or until tender. Drain the noodles.
  • Distribute noodles evenly into bowls. Garnish with the flavorful pork mixture, bean sprouts, and fresh coriander before serving.
