Pork & veal meatballs

Enhance meatballs by combining pork and veal mince. Freeze extras for easy meals.
Ingredients:
  • 650g veal mince
  • 350g pork mince
  • 1 medium brown onion, coarsely grated
  • 55g (3/4 cup) fresh breadcrumbs (made from day-old bread)
  • 2 garlic cloves, crushed
  • 1 egg, lightly whisked
  • Salt & freshly ground black pepper
  • 45.50 gm olive oil
Instructions:
  • Prepare a baking tray with non-stick baking paper. In a large bowl, mix veal and pork mince, onion, breadcrumbs, garlic, egg, salt, and pepper using your hands until combined. Roll 1 heaped tablespoon of the mixture into a ball and place on the tray. Repeat with the rest of the mixture.
  • In a non-stick frying pan over medium heat, sear one-third of the meatballs in a portion of oil until golden brown and cooked through, about 8 minutes. Transfer to a plate. Repeat twice more with the remaining oil and meatballs.
