Pork carnitas sauce: slow-cooked flavor fusion.
Ingredients:
  • 1 pound pork shoulder
  • 2 tablespoons Mazola® Corn Oil
  • 0.25 cup chopped onions
  • 0.5 teaspoon Spice Islands® Garlic Powder
  • 1 tablespoon Spice Islands® Chili Powder
  • 0.25 teaspoon Spice Islands® Chipotle Chile Powder
  • 2 tomatillos, finely chopped
  • 0.5 cup finely chopped tomatoes
  • 0.25 cup coarsely chopped fresh cilantro
  • 4 corn tortillas
Instructions:
  • Dice the pork into 1-inch cubes and generously season with salt and pepper to enhance the flavors.
  • In a large skillet or Dutch oven, heat oil over medium-high heat. Add pork, onions, garlic powder, chili powder, and chipotle chile powder. Cook, stirring occasionally, until browned, about 3 to 5 minutes.
  • Add just enough water to cover the pork, bring to a boil, then cover, reduce heat, and simmer for 30 minutes. Uncover and simmer until liquid has evaporated, approximately 45 minutes.
  • Mix together the chopped tomatillos, tomatoes, and cilantro in a small bowl.
  • Divide the pork equally among the tortillas and spoon the tomatillo salsa on top.
