Effortless authentic Mexican pork carnitas bursting with flavor, just like the ones in Mexico.
Ingredients:
  • 1 (5 pound) boneless pork shoulder
  • salt and freshly ground black pepper to taste
  • 1 tablespoon safflower oil
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Trim any excess fat from the pork shoulder and cut it into 2-inch cubes. Season generously with salt and freshly ground black pepper on all sides to enhance the flavors.
  • Preheat a cast iron braiser over medium-high heat. Add oil to the pot and sear pork until all sides are golden brown, approximately 10 minutes. Cover with the lid.
  • Roast the pork in the preheated oven until it achieves a crispy exterior and a tender, fully cooked interior, which should take approximately 1 hour.
