Grilled Pork Tenderloin with Plums

Easy pork tenderloin marinade hack for juicy grilled perfection - no injector necessary!
Ingredients:
  • 1/4 cup port wine
  • 1/4 cup orange juice
  • 1 tablespoon cider vinegar
  • 1/2 teaspoon garlic salt
  • 2 pork tenderloins (about 3/4 pound each)
  • 6 plums, pitted and cut in half
  • 1/4 cup plum jam
Instructions:
  • Combine all Port Wine Marinade ingredients. Place pork in a shallow glass or plastic dish. Fill the meat injector with marinade and inject into pork every 1 to 2 inches, pushing down the plunger slowly. Refill the injector and continue injecting until marinade is finished. Cover and refrigerate for 1 hour.
  • Preheat the grill for direct heat. Grill the pork until it reaches 160°F in the center, about 20-25 minutes, brushing with jam during the last minute. Add the plums to the grill for the last 4-6 minutes, brushing with jam in the final minute, until hot.
  • Slice the pork and plate with plums.
