Delight six with a quick and delicious main course in under 35 minutes!
Ingredients:
  • 2 pork tenderloins (3/4 lb each)
  • 4 cloves garlic, thinly sliced
  • 2 tablespoons grated lime peel
  • 1 tablespoon vegetable oil
  • 2 teaspoons fresh lime juice
  • 1/2 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
Instructions:
  • Preheat the gas or charcoal grill. Make shallow slits, 1/4 to 1/2-inch deep, on the top of each pork tenderloin and stuff with garlic slices.
  • Combine lime zest, olive oil, fresh lime juice, honey, salt, and pepper in a small bowl; mix until fully incorporated.
  • Once the grill is nice and hot, generously coat the pork tenderloins with the zesty lime mixture. Lay the pork onto a gas or charcoal grill over medium heat, then cover and cook for 18 to 22 minutes, flipping occasionally until the pork has a hint of pink in the middle and a meat thermometer reads 160°F. Slice the pork and serve it up.
