Elevate pork tenderloin with a sweet and spicy fruit relish in a flash!
Ingredients:
  • 6 small plums, sliced (or other fresh fruit of your choice)
  • 1 or 2 jalapeño chiles, seeded, thinly sliced
  • 1/4 cup sliced red onion
  • 2 tablespoons lime juice
  • 2 to 4 teaspoons honey
  • Salt to taste
  • 1 to 2 tablespoons fresh rosemary, finely chopped
  • 1 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 lb pork tenderloin
  • Canola or vegetable oil for grill
Instructions:
  • Combine the Plum Relish ingredients, adjust seasoning with salt or honey as desired, then set aside.
  • Combine fragrant rosemary, 1 teaspoon of salt, a touch of red pepper, garlic powder, onion powder, and black pepper in a small bowl. Massage the flavorful mixture onto the pork tenderloin. Let it sit at room temperature as you preheat the grill or grill pan over high heat.
  • Prepare the grill by brushing it with oil. Adjust the heat to medium-high and place the pork on the grill. Cook the pork on all sides for approximately 7 minutes per side (adjust time based on the thickness of the tenderloin) until fully cooked. Remove the pork from the grill, wrap it in foil, and let it rest for 15 minutes. Slice and serve with plum relish.
