Grilled Pork Tenderloin with Pineapple Salsa

Spicy cumin and jalapeño spiced pork with sweet pineapple and marmalade.
Ingredients:
  • 1/2 teaspoon finely chopped gingerroot or 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/2 lb pork tenderloin
  • 1 kiwifruit, peeled, chopped
  • 1 slice (1/2-inch-thick) pineapple, rind removed, cut into 1/2-inch pieces
  • 1 tablespoon orange marmalade
  • 1 teaspoon finely chopped jalapeño chile
Instructions:
  • Preheat gas or charcoal grill. Combine gingerroot, salt, and cumin in a small bowl. Generously season pork with the ginger mixture.
  • Grill the pork covered over medium heat for 15 to 20 minutes, turning occasionally, until it has a slight blush of pink in the center and reaches an internal temperature of 160°F.
  • In a small bowl, blend all ingredients until the marmalade is well incorporated.
  • Slice the pork thinly and accompany it with a vibrant pineapple salsa.
