Grilled Pork Tenderloin with Firecracker Marinade

Spicy pork fiesta for a lively gathering!
Ingredients:
  • 1/2 cup barbecue sauce
  • 2 tablespoons packed brown sugar
  • 2 tablespoons olive or vegetable oil
  • 2 tablespoons white wine vinegar
  • 2 tablespoons soy sauce
  • 1 to 2 teaspoons red pepper sauce
  • 1 clove garlic, finely chopped
  • 3 pork tenderloins (2 1/4 lb)
  • 3 large red or yellow bell peppers, roasted and cut into strips
  • 1 tablespoon balsamic vinegar
  • Salt, to taste
  • 2 cloves garlic, finely chopped
Instructions:
  • Combine barbecue sauce, brown sugar, oil, white wine vinegar, soy sauce, pepper sauce, and garlic in a resealable plastic bag. Add pork and coat evenly. Marinate in the refrigerator for at least 2 hours, turning occasionally, up to 12 hours.
  • Preheat grill for direct heat. Combine bell peppers, 2 tablespoons of oil, balsamic vinegar, salt, and 2 cloves of garlic in a large bowl. Take pork out of marinade; set marinade aside.
  • Grill the pork covered over medium heat for 20 to 25 minutes, brushing with marinade and turning once, until the center has a slight blush of pink and a meat thermometer reads 160°F. Discard any extra marinade.
  • Slice the pork and elegantly arrange it on a platter along with the bell pepper mixture.
