Tender grilled pork with zesty orange marmalade glaze.
Ingredients:
  • 1/3 cup soy sauce (use gluten-free soy sauce for gluten-free version)
  • 1/3 cup orange marmalade
  • 1/3 cup honey
  • 1 tablespoon plus 1 teaspoon rice wine vinegar
  • Pinch crushed red pepper flakes
  • 1 pound pork tenderloin
  • 2 scallions, thinly sliced (optional)
  • Olive oil (for grill)
Instructions:
  • Prepare the marinade by gently simmering soy sauce, marmalade, honey, rice wine vinegar, and red pepper flakes in a small saucepan over medium heat. Allow the mixture to cool, then set aside half for later use as a sauce for the cooked tenderloin.
  • Marinate the tenderloin in the remaining marinade for 1 hour.
  • Get the grill ready: While the tenderloin is marinating, set up the grill with high direct heat on one side and low heat on the other side.
  • Sear tenderloin on all sides: Pat dry the tenderloin from the marinade and brush with olive oil. Grill over high heat, starting with the narrow end away from direct heat. Rotate until all sides are seared with grill marks, about 1-2 minutes per side.
  • Transfer the tenderloin to the cooler side of the grill, cover, and continue cooking for a few more minutes until the internal temperature reaches 140°F (no higher). Remove from the heat.
  • If the temperature has gone above 140°F, slice the pork immediately to prevent overcooking. If the temperature is right, tent the tenderloin with foil and let it rest for 10 minutes. After resting, thinly slice, and garnish with the leftover glaze and scallions. Serve with rice.
