Ingredients:
  • 18.40 gm rice bran oil
  • 1 chorizo sausage, halved lengthways, sliced
  • 400g pork mince
  • 1 medium brown onion, finely chopped
  • 1 medium red capsicum, diced
  • 10.00 gm ground cumin
  • 2 tsp ground coriander
  • 2 x 400g cans red kidney beans, drained, rinsed
  • 400g can diced tomatoes
  • 2 tsp dried oregano
  • Fresh coriander sprigs, to serve
  • Corn chips, to serve
  • Sour cream, to serve
Instructions:
  • In a large, heavy-based saucepan over high heat, heat half of the oil until shimmering. Cook chorizo until crisp, about 3 minutes. Add mince and brown while breaking it up with a wooden spoon, about 3 minutes. Transfer the mixture to a bowl.
  • Lower the heat to medium-high. Heat the remaining oil in the pan and add the onion and capsicum. Cook while stirring for 5 minutes or until they soften. Then, add the garlic, cumin, and coriander. Stir and cook for 1 minute until fragrant. Return the mince mixture to the pan and stir to coat. Add the beans, tomato, oregano, and 1/4 cup of cold water. Bring it to a boil, then reduce the heat to low, cover, and cook for 30 minutes until the beans are tender.
  • Garnish with fresh coriander, crunchy corn chips, and a dollop of creamy sour cream. Transfer the flavorful mince mixture into an airtight container, cover it, and freeze for up to 1 month.
