Italian-style pork chops with veggies and savory sauce.
Ingredients:
  • 1 teaspoon olive oil
  • 2 cups sliced mushrooms
  • 2 tablespoons olive oil
  • 6 (3/4 inch thick) pork loin chops
  • 1 cup chopped onion
  • 2 cloves garlic, crushed
  • 1 (14.5 ounce) can diced Italian tomatoes, undrained
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup water
  • 6 large green bell pepper slices
Instructions:
  • In a skillet over medium heat, sizzle 1 teaspoon of oil. Saute mushrooms until tender, about 5 to 7 minutes. Place in a bowl and keep aside for later use.
  • Heat 2 tablespoons of oil in a skillet over medium heat. Brown the pork chops for 3 1/2 to 5 minutes on each side. Transfer chops to a plate and leave 1 tablespoon of drippings in the skillet.
  • Sauté onion and garlic in the skillet until onion is soft and translucent, around 5 minutes. Mix in tomatoes, basil, oregano, salt, and pepper. Add pork chops and cook gently until they are tender and cooked through, about 45 minutes. If the mixture dries out, pour in water. Ensure each pork chop reaches an internal temperature of at least 145°F (63°C) using an instant-read thermometer.
  • Top each pork chop with a bell pepper slice, add the reserved mushrooms, and simmer until peppers are tender, 5 to 10 minutes.
