One-pan Italian-style pork chops and potatoes for a quick and delicious meal with easy cleanup.
Ingredients:
  • 4 bone-in pork loin chops, 1/2 inch thick (about 1 1/2 lb)
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon garlic-pepper blend
  • 2 tablespoons olive or vegetable oil
  • 3 medium unpeeled Yukon Gold potatoes, cut into 1/2-inch cubes
  • 1 red bell pepper, cut into bite-size strips
  • 2/3 cup shredded Italian cheese blend
Instructions:
  • Preheat your oven to 425°F and generously spray a 15x10x1-inch pan with cooking spray. Arrange pork chops on one side of the pan.
  • Combine 3/4 teaspoon of thyme, garlic-pepper blend, and oil in a large bowl. Gently brush the pork with some of the oil mixture. Toss potatoes and bell pepper in the remaining mixture in the bowl until evenly coated. Spread the vegetables on the other half of the pan.
  • Bake the pork uncovered for 30 to 35 minutes, or until no longer pink in the center. Sprinkle cheese and the remaining 1/4 teaspoon of thyme over the pork, then bake for an additional 2 to 3 minutes until the cheese is melted.
