Cheesy grilled cheese with crispy bacon on crusty bread - the ultimate BBQ delight!
Ingredients:
  • 1 loaf ciabatta bread
  • 4 rashers higher-welfare thinly sliced dry-cured smoke bacon, or pancetta
  • 2 lemons zest of
  • 2 large buffalo mozzarella cheeses
  • 8 sticks fresh rosemary
  • 1 clove garlic
  • 3 handfuls mixed fresh herbs (chives, chervil, mint, basil, parsley)
  • 1 good handful black olives stones removed
  • 1 fresh red chilli deseeded and finely chopped
  • 5 tablespoons lemon juice
  • 4 tablespoons extra virgin olive oil
Instructions:
  • Prepare the ingredients by tearing the ciabatta and bacon, dividing the mozzarella, and smashing the garlic with rosemary leaves in olive oil. Marinate for 15 minutes to 1 hour. Thread the ingredients onto rosemary sticks and grill until golden. Make a dressing with chopped olives, chili, lemon juice, and olive oil. Dress the herbs with half the dressing, then drizzle the remaining dressing over the kebabs before serving.
