Grilled marinated chicken with pineapple, onion, and lettuce on Hawaiian rolls.
Ingredients:
  • 1 lime, juiced
  • 1 tablespoon cider vinegar
  • salt and black pepper to taste
  • 3 skinless, boneless chicken breast halves - cut in half
  • 6 pineapple rings
  • 2 tablespoons teriyaki sauce
  • 6 slices red onion
  • 6 Hawaiian bread rolls - split and toasted
  • 6 lettuce leaves - rinsed and dried
Instructions:
  • In a large glass or ceramic bowl, combine lemon juice, lime juice, cider vinegar, salt, and pepper. Add chicken and coat evenly. Cover with plastic wrap and refrigerate for 1 hour to marinate.
  • Heat up your outdoor grill until it reaches medium-high heat, then give the grate a light coating of oil.
  • After marinating, shake off excess marinade from the chicken and discard the rest. Grill the chicken for 5 to 7 minutes on each side until juices run clear when pierced with a fork. Grill the pineapple for 2 to 3 minutes per side until heated through with grill marks.
  • Take a toasted roll and generously spread 1 teaspoon of teriyaki sauce on one half. Top with a crisp lettuce leaf, a juicy piece of chicken, a sweet pineapple round, and a flavorful onion slice. Close the sandwich and repeat the delicious layers with the rest of the rolls.
