Grilled chicken and pineapple skewers with zesty yogurt sauce - a hit for all ages! Perfect summer dish.
Ingredients:
  • For the lemon yogurt sauce:
  • 1/2 cup plain yogurt
  • 1/2 lemon, juice only
  • 1/4 teaspoon salt
  • DAD ADD: Spicy Yogurt Sauce
  • 1 tablespoon sriracha chili sauce
  • For the kabobs:
  • 1/4 cup olive oil
  • 1/4 cup pineapple juice
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon ground black pepper
  • 1 1/2 pounds chicken (breast or thighs), cut into 1-inch pieces
  • 1 pineapple, peeled and chopped into 1-inch pieces
  • 1 green bell pepper, chopped into 1-inch pieces
  • 1 red bell pepper, chopped into 1-inch pieces
  • Couscous or rice, for serving
Instructions:
  • Prepare the sauces: Combine ingredients for the lemon yogurt sauce and spicy yogurt sauce in separate small bowls. Consider doubling the lemon yogurt sauce if omitting the spicy yogurt sauce.
  • Prepare a flavorful marinade by combining olive oil, pineapple juice, garlic, soy sauce, salt, and pepper in a medium bowl. Toss in the chicken, ensuring it is evenly coated. Allow the chicken to marinate for 20 to 30 minutes, or for maximum flavor marinate it overnight.
  • Preheat a gas or charcoal grill until it reaches medium-high heat.
  • Thread the pineapple, peppers, and chicken onto the skewers in any desired order, ensuring each piece of pineapple is touching a piece of chicken for added moisture. Aim to distribute the ingredients evenly among the eight skewers.
  • Before grilling, coat the grates with oil to prevent sticking of kabobs. Cook kabobs for 5 to 6 minutes on each side until a desirable char forms, flipping occasionally for a total grill time of 15-18 minutes. Verify doneness by testing a larger piece of chicken - it should reach 165°F or check for doneness by cutting into the meat slightly.
  • Serve: Take the kabobs off the grill right away to keep them succulent. Enjoy them with yogurt sauce and your choice of rice or couscous. For leftovers, store in the fridge; reheat on a medium-low grill or in a 350°F oven for about 5 minutes until warmed through.
