Grilled chicken with sweet-and-tangy bell peppers cooked in foil packs for easy, delicious flavor infusion.
Ingredients:
  • 1/3 cup pineapple preserves
  • 2 tablespoons packed brown sugar
  • 1 tablespoon soy sauce
  • 1/4 teaspoon crushed red pepper
  • 4 boneless skinless chicken breasts, cut into 2-inch cubes (1 lb)
  • 1 medium red bell pepper, cut into 1 1/2-inch cubes
  • 1 medium green bell pepper, cut into 1 1/2-inch cubes
  • 1 cup pineapple chunks
  • 1/4 teaspoon salt
Instructions:
  • Preheat gas or charcoal grill. Combine pineapple preserves, brown sugar, soy sauce, and crushed red pepper in a small bowl.
  • Prepare 4 (24x12-inch) sheets of heavy-duty foil. Equally distribute chicken, bell peppers, pineapple chunks, and pineapple preserves onto the foil sheets. Season with salt. Fold the foil to create packets, ensuring a tight seal for heat circulation and expansion.
  • Grill the packets over medium heat with the lid on for 6 minutes. Gently flip the packets using tongs, making sure not to tear the foil. Continue grilling for an additional 10-12 minutes until the chicken is cooked through and the vegetables are tender-crisp.
