Grilled Chicken and Pineapple Sandwiches

Create a delicious hot sandwich by grilling fruit and chicken together for a unique and flavorful twist.
Ingredients:
  • 2 tablespoons taco sauce
  • 2 teaspoons honey
  • 1/4 cup mayonnaise
  • 4 boneless skinless chicken breast halves
  • 1/2 teaspoon seasoned salt
  • 4 pineapple slices (from 8-oz. can)
  • 4 (1/2-oz.) slices Monterey Jack cheese
  • 4 kaiser rolls, split
  • 4 lettuce leaves
Instructions:
  • Preheat gas or charcoal grill. Mix taco sauce and honey in a small bowl until fully combined. In another small bowl, blend mayonnaise with 2 teaspoons of the taco sauce mixture. Chill until ready to serve.
  • Season the chicken breast halves with seasoned salt and generously brush them with approximately 1 tablespoon of the flavorful taco sauce mixture.
  • Once the grill is hot, place the chicken on the gas grill over medium heat or on the charcoal grill 4 to 6 inches from medium coals. Cook for 10 to 12 minutes until the chicken is fork-tender and the juices run clear, turning and brushing occasionally with taco sauce. Dispose of any extra taco sauce.
  • Place a slice of cheese on top of each chicken breast to allow it to melt. Grill pineapple slices for 2 minutes. Toast the cut side of the rolls on the grill during the last 30 seconds of cooking time.
  • On the bottom halves of the rolls, slather the creamy mayo mixture. Layer each with crisp lettuce, savory cheese-topped chicken, a sweet pineapple slice, and finish with the top halves of the rolls.
