Delicious and simple dinner bursting with savory, sweet, and tangy tastes.
Ingredients:
  • 20.00 ml coriander seeds
  • 4 Pork Cutlets
  • 80ml grapefruit juice
  • 60ml olive oil
  • 100g lentils
  • 20.00 ml white wine vinegar
  • 5.90 gm Dijon Mustard
  • 14.40 gm Pure Australian Honey
  • 2 Ruby Red grapefruit, peeled, sliced
  • 1 small fennel, finely shaved
  • 4 radishes, thinly sliced
  • 1/2 red onion, thinly sliced
  • 120g pkt Baby Rocket
  • 100g goat’s cheese
Instructions:
  • Crush coriander seeds using a spice grinder or mortar and pestle until coarse. Combine crushed seeds with pork, half of the grapefruit juice, and 1 tbs of oil in a large bowl. Mix well, season, and let it sit for 15 mins to enhance the flavors.
  • Simmer the lentils in a large saucepan of boiling water for 15 minutes or until they are tender. Then, cool them down under cold water and drain them well.
  • Preheat a chargrill on medium-high heat. Drain the pork and place it on the grill, cooking for 2 1/2 minutes on each side or until it reaches your desired level of doneness. Allow the pork to rest, covered, for 5 minutes before serving.
  • In a screw-top jar, shake together vinegar, mustard, honey, remaining grapefruit juice, and remaining oil until well combined. Season to taste.
  • In a big bowl, mix together the lentils, grapefruit slices, fennel, radish, onion, and rocket. Drizzle with dressing, toss well to coat. Distribute onto plates and top with goat's cheese. Serve alongside the pork.
