Pork Loin with Apricot-Rosemary Glaze

Rosemary-infused glaze with apricot preserves and sherry creates a delicious sweet and savory balance.
Ingredients:
  • 3-lb pork loin roast
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup apricot preserves
  • 1/4 cup dry sherry, cooking sherry or apple juice
  • 2 teaspoons dried rosemary leaves, crumbled
  • 2 cloves garlic, finely chopped
Instructions:
  • Preheat oven to 350°F. Remove excess fat from the pork and place it in a 13x9-inch glass baking dish. Season with salt and pepper.
  • In a 10-inch skillet, simmer apricot preserves, sherry, fragrant rosemary, and garlic over medium heat until it thickens, stirring occasionally. If needed, gently crush apricot pieces with a fork. Spread 1/4 cup of the apricot mixture over the pork (save the rest for later). Place a meat thermometer into the pork, ensuring the tip is at the center of the thickest part.
  • Bake the pork uncovered for 1 hour and 15 minutes to 1 hour and 30 minutes or until a thermometer reads 155°F. Cover the pork with foil and let it rest for 15 to 20 minutes until the thermometer reads 160°F. Slice the pork and warm up the remaining apricot mixture before serving with the pork.
