Elegant Pork Loin Roast

Roasted pork loin with apricots, prunes, and port wine sauce - a luxurious main course.
Ingredients:
  • 1 (4 pound) boneless pork loin roast
  • 0.25 cup Dijon mustard
  • 2 tablespoons packed brown sugar
  • 1.5 cups apple juice, divided
  • 1 cup pitted prunes
  • 1 cup dried apricots
  • 0.75 cup red wine
  • 0.25 cup packed brown sugar
  • 0.125 teaspoon ground cloves
  • 2 teaspoons cornstarch
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • Spread a mixture of mustard and 2 tablespoons of brown sugar over the roast in a shallow roasting pan.
  • Roast in the preheated oven for 3 hours, generously basting with 1/4 cup of apple juice every 30 minutes until the internal temperature reaches 145 degrees F (63 degrees C).
  • In the final hour of roasting, mix prunes, apricots, red wine, 1/4 cup brown sugar, 3/4 cup pan juices, and cloves in a saucepan over medium heat. Boil, cover, and simmer for 15 minutes. Arrange the fruit around the roast during the last 30 minutes of cooking.
  • After the roast is cooked, transfer it to a serving platter and arrange the fruit around it. Take out 1/4 cup of drippings from the roasting pan and combine with cornstarch. Stir this mixture back into the drippings in the pan, cook over medium-high heat until thickened for about 5 minutes. Serve in a gravy boat or bowl.
  • Carve the roast and allow guests to help themselves to the sauce.
