Slow-Cooker Italian Pork Loin

Impress with a succulent pork loin, cannellini beans, and veggies in a simple slow-cooker meal that's both elegant and effortless.
Ingredients:
  • 2 cans (15 oz each) Progresso™ cannellini beans, drained, rinsed
  • 1 cup thinly sliced yellow onions
  • 1 red bell pepper, cut into thin slices
  • 1 tablespoon Italian seasoning
  • 2 tablespoons vegetable oil
  • 2 teaspoons salt
  • 2 1/2 to 3 1/2 lb boneless pork loin roast, trimmed
  • 1 can (28 oz) Muir Glen™ organic fire-roasted diced tomatoes, drained
  • 1 cup shredded mozzarella cheese (4 oz)
  • 1/4 cup shredded fresh basil leaves
Instructions:
  • Coat a 5- to 6-quart slow cooker with cooking spray, then combine beans, onions, bell pepper, Italian seasoning, 1 tablespoon of oil, and 1 teaspoon of salt in the slow cooker.
  • Massage the pork loin with the remaining oil and salt. Heat a 12-inch nonstick skillet over medium-high heat. Sear the pork in the hot skillet for 3 to 5 minutes on both large flat sides until beautifully browned. Next, transfer the seared pork to the slow cooker and pour the tomatoes over the top. Cover and let it cook on Low heat setting for 3 to 4 hours until the pork reaches an internal temperature of 145°F.
  • Place cooked pork on cutting board to cool. Mix bean mixture in slow cooker and transfer to serving platter using a slotted spoon. Slice pork into 8 pieces. Arrange pork slices on top of the beans and add mozzarella cheese. Cover with foil for 3 to 5 minutes until cheese melts. Garnish with fresh basil before serving.
