Convenient pork mince: Elevate your winter meals with a quick trip to the store!
Ingredients:
  • 400g pork mince
  • 1 egg
  • 125.00 ml dried breadcrumbs
  • 62.50 ml grated tasty cheese
  • 62.50 ml finely chopped fresh flat-leaf parsley leaves
  • 1 tsp caraway seeds
  • 1 medium brown onion, thinly sliced
  • 1 medium red capsicum, thinly sliced
  • 2.50 gm sweet paprika
  • 400g can diced tomatoes, to serve
  • Steamed rice, to serve
  • Sour cream, to serve
Instructions:
  • Mix together the mince, egg, breadcrumbs, cheese, parsley, and caraway in a bowl. Season with salt and pepper, then shape leveled tablespoons of the mixture into balls and place them on a plate.
  • In a large frying pan, heat half of the oil over medium-high heat. Cook meatballs, turning occasionally, for 5 minutes until they are nicely browned. Remove meatballs from the pan. Add the remaining oil to the pan and sauté the onion and capsicum for 5 minutes until softened. Stir in garlic and paprika, cooking for 1 minute until fragrant. Return the meatballs to the pan, then add tomatoes and 1/4 cup of cold water. Cover and bring to a boil. Reduce the heat to low and simmer covered for 10 minutes until the meatballs are cooked through.
  • Garnish with rice and a dollop of sour cream.
