Delicious beef and pork meatballs in a savory tomato sauce, perfect for a family dinner.
Ingredients:
  • 12 Jacob's cream crackers
  • 4 sprigs of fresh rosemary
  • 2 heaped teaspoons Dijon mustard
  • 500 g quality minced beef, pork, or a mixture of the two
  • 1 heaped tablespoon dried oregano
  • 1 large free-range egg
  • olive oil
  • 1 bunch of fresh basil
  • 1 medium onion
  • 2 cloves of garlic
  • ½ a fresh or dried red chilli
  • 2 x 400 g tin of plum tomatoes
  • 2 tablespoons balsamic vinegar
  • 400 g dried spaghetti or penne
  • Parmesan cheese
Instructions:
  • Place crackers in a tea towel and crush until fine. Transfer to a large bowl. Finely chop rosemary and add to the bowl with mustard, minced meat, and oregano. Crack in an egg, season with salt and pepper, then mix well. Shape mixture into 24 meatballs and chill in the fridge. In a frying pan, sauté onion, garlic, chili, and basil. Add tomatoes, balsamic vinegar, and season. Simmer tomato sauce. In another pan, cook meatballs until no longer pink inside. Combine cooked pasta with half the tomato sauce, adjusting consistency with reserved cooking water. Serve with remaining sauce, meatballs, Parmesan, and basil. Enjoy!
