Irresistible meatball pasta loved by all.
Ingredients:
  • 60ml olive oil
  • 1 onion, finely chopped
  • 250ml white wine
  • 400g can Italian chopped tomatoes
  • 400g dried short pasta
  • Flaked parmesan, to serve
  • Salt, to season
  • 500g minced beef
  • 25g sliced salami, finely chopped
  • 2 cloves garlic, crushed
  • 50g parmesan, finely grated
  • 1 egg, lightly beaten
  • 35g breadcrumbs
Instructions:
  • Combine all ingredients in a bowl and season generously with salt and pepper. Mix thoroughly to ensure all flavors meld together. Shape mixture into tablespoon-sized balls.
  • In a large frying pan or saucepan over high heat, sizzle the oil and carefully add the meatballs. Cook them, turning occasionally, for about 5 minutes until they are beautifully browned. Transfer the meatballs from the pan and set them aside.
  • Cook diced onion in a pan over medium heat, stirring frequently, until tender, about 5 minutes. Pour in wine or stock and let it simmer until reduced by half. Add the meatballs back into the pan along with tomatoes, bring to a boil, cover, and simmer for 15 minutes until the sauce thickens.
  • While the meatballs simmer in the sauce, prepare the pasta in a large saucepan of boiling salted water until it reaches the perfect al dente texture. Drain the pasta and return it to the pan. Mix in the meatballs and sauce thoroughly before serving. Top off with a generous sprinkling of flaked parmesan before serving.
