Elevate your pasta dish with flavorful sausage meatballs for a delicious shortcut.
Ingredients:
  • 500g good-quality pork and herb sausages
  • 500ml passata
  • 250ml chicken stock
  • 400g rigatoni or penne rigate
  • Sliced basil leaves, to serve
  • Grated parmesan, to serve
Instructions:
  • Preheat your oven to 180°C and prepare a baking tray by lining it with baking paper.
  • Remove the sausage from casings and shape into small 2cm meatballs. Place meatballs in a single layer on a baking tray and bake until golden, about 15 minutes.
  • As the meatballs bake, combine tomato passata and chicken stock in a large saucepan over medium heat. Season generously with sea salt and freshly ground black pepper. Simmer for 5 minutes until slightly reduced. Remove meatballs from oven, drain off excess fat, and add to the sauce. Simmer over medium-low heat for 10 minutes until sauce thickens.
  • Cook the pasta in a large pot of salted boiling water following the package instructions. Drain the pasta and coat it with olive oil.
  • Plate the pasta, then generously ladle meatballs and sauce on top. Garnish with fresh basil leaves and sprinkle with grated Parmesan before serving.
