Chicken meatballs with creamy mustard sauce

Delicious pasta and meatballs with creamy mustard sauce ready in 30 minutes!
Ingredients:
  • 500g lean chicken sausages
  • 18.20 gm olive oil
  • 1 small red onion, finely chopped
  • 250g button mushrooms, thinly sliced
  • 20.00 ml plain flour
  • 255.00 gm chicken style liquid stock
  • 300ml pure cream
  • 46.80 gm wholegrain mustard
  • 40.00 ml chopped fresh chives
  • Cooked penne rigate, to serve
  • Steamed broccoli, to serve
Instructions:
  • Remove chicken sausage from casings and gently shape level tablespoons into meatballs. Heat half of the oil in a large frying pan over medium heat. Add meatballs and cook for 4 to 5 minutes, turning occasionally, until browned and fully cooked. Place on a plate lined with paper towel and clean the pan if necessary.
  • Place the pan back on the heat and pour in the rest of the oil. Toss in the onion and sauté for 3 to 5 minutes until it becomes soft. Next, introduce the garlic and mushrooms, stirring for about 5 minutes until the mushrooms are tender.
  • 1. Add flour to the pan and stir for 1 minute. 2. Pour in stock, cream, and mustard. Stir until fully combined. 3. Lower the heat to medium-low and cook for 4 to 5 minutes until the sauce thickens slightly. 4. Mix in the meatballs and half of the chives. Season with salt and pepper. 5. Cook for an additional minute until heated through.
  • Portion the pasta evenly into bowls. Top each with a generous amount of the savory meatball mixture. Finish by sprinkling the remaining chives on top. Enjoy with a side of broccoli.
