Zesty chicken meatballs made with creamy garlic cheese for a light and moist bite full of flavor.
Ingredients:
  • 1 pound ground chicken
  • 2 eggs, lightly beaten
  • 0.25 cup roasted garlic light cream cheese
  • 0.25 cup grated Parmesan cheese
  • 1 tablespoon dry bread crumbs
  • 1 teaspoon crushed red pepper flakes
  • 1 tablespoon Italian seasoning
  • 1 tablespoon garlic powder
  • 1.5 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C), and prepare a rimmed baking sheet by lining it with aluminum foil and giving it a quick spray of cooking spray.
  • Mix together the chicken, eggs, cream cheese, Parmesan cheese, bread crumbs, red pepper flakes, Italian seasoning, garlic powder, vegetable oil, salt, and pepper in a large bowl until fully combined. Shape the mixture into 20 meatballs and arrange them on a baking sheet.
  • Roast in the center of a hot oven until clear juices flow, about 17 to 18 minutes. Check with an instant-read thermometer - it should register a minimum of 165°F (74°C) in the center.
