Delicious Thai chicken meatballs with creamy peanut butter, sweet Thai chili sauce, and fresh ginger.
Ingredients:
  • 1 pound ground chicken
  • 1 large egg, beaten
  • ½ cup panko bread crumbs
  • ¼ cup creamy peanut butter
  • ¼ cup sweet Thai chili sauce
  • 1 tablespoon fresh minced ginger
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and elegantly line a baking sheet with parchment paper.
  • Combine ground chicken, egg, bread crumbs, peanut butter, sweet Thai chili sauce, and ginger in a large bowl until well blended.
  • Shape the mixture into 1 1/2-inch balls and place them on the prepared baking sheet.
  • Roast in the oven until golden and fully cooked through, approximately 15 minutes. Check doneness by inserting an instant-read thermometer into the center, ensuring it reaches at least 165 degrees F (74 degrees C).
