Peanut Butter Chicken

Tender chicken in creamy peanut butter sauce with onions and mushrooms, perfect over rice, noodles, or quinoa.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 pound skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 1 medium onion, sliced
  • 7 fresh mushrooms, sliced
  • 0.125 teaspoon red pepper flakes
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 0.75 cup chicken stock
  • 0.75 cup smooth peanut butter
Instructions:
  • In a large skillet over medium heat, heat oil until shimmering. Add chicken and cook until it starts to turn white. Stir in onion, mushrooms, and red pepper flakes. Season with salt and pepper. Cook, stirring frequently, until onions are translucent, about 5 minutes.
  • Pour the tomatoes and chicken stock into the skillet and simmer for 10 minutes until chicken is cooked through. Stir in peanut butter and cook until the sauce thickens, about a minute or two. You can add more peanut butter if needed.
