Peanut Butter-Chili Chicken

Peanut butter and chili sauce create a delectable fusion over pasta or rice in this irresistible dish that is bound to become a family favorite!
Ingredients:
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cut-up whole chicken (3 to 3 1/2 pounds)
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped (1/2 cup)
  • 1/3 cup peanut butter
  • 1/4 cup chili sauce
  • 1/2 teaspoon ground red pepper (cayenne)
  • 1 cup water
  • 1/4 cup chopped salted peanuts
  • 1/4 cup chopped red bell pepper
  • Angel hair pasta or rice, if desired
Instructions:
  • Season the chicken with a sprinkle of salt and pepper.
  • Warm up the oil in a large skillet or Dutch oven over medium heat.
  • Sear chicken in oil for 15 minutes, turning occasionally, until golden brown on all sides. Cover and simmer over low heat for 20 minutes or until juices run clear when thickest pieces are cut. Use tongs to transfer chicken from skillet.
  • Keep 1 tablespoon of drippings in the skillet and warm it over medium heat.
  • Sautee onions in flavorful drippings until soft, then lower the heat. Mix in creamy peanut butter, zesty chili sauce, and a hint of ground red pepper. Slowly incorporate water, stirring consistently until the peanut butter is smooth. Gently mix in the chicken and generously coat with the savory peanut butter sauce.
  • Simmer uncovered for about 5 minutes, spooning sauce over chicken until slightly thickened. Serve chicken with sauce, topped with peanuts and bell pepper, alongside pasta.
