Spicy peanut butter and coconut chicken omelette for a flavorful twist.
Ingredients:
  • 200g chicken breast fillet
  • 41.60 gm smooth peanut butter
  • 63.13 gm coconut cream
  • 10.60 gm soy sauce
  • 4 eggs
  • 1 green onion, thinly sliced
  • 20g butter
  • 1/2 long red chilli, thinly sliced
  • 62.50 ml fresh coriander leaves
  • 20.00 ml crushed toasted peanuts
  • lemon wedges, to serve
Instructions:
  • In a saucepan, add chicken and cover with cold water. Bring it to a boil over medium heat, then reduce to low and simmer for 5 minutes. Remove from heat, cover, and set aside for another 5 minutes. Take the chicken out of the pan and let it cool slightly before shredding.
  • In a microwave-safe bowl, mix peanut butter, coconut cream, and soy sauce. Microwave on high for 30 seconds until hot. Add chicken and stir until coated. Keep covered to stay warm.
  • In a bowl, whisk together eggs, onion, and 2 tablespoons of cold water until well combined. In a small frying pan over medium-high heat, melt half of the butter. Pour in half of the egg mixture, swirling the pan to ensure it covers the base. Cook for 1 minute, or until almost set. Transfer to a plate and cover to keep warm. Repeat the process with the remaining butter and egg mixture.
  • Sprinkle chicken mixture, chili, fresh coriander, and nuts over omelettes. Serve with lemon wedges.
