Pork mince spaghetti with garlic cream sauce

Indulge in a creamy pork pasta tossed with fresh vegetables - a quick and delightful twist on the classic spaghetti!
Ingredients:
  • 375g dried Italian Spaghetti
  • 150g green beans, trimmed, halved
  • 1 bunch broccolini, cut into 5cm lengths
  • 1 bunch asparagus, trimmed, cut into 5cm lengths
  • 18.20 gm extra virgin olive oil
  • 500g pork mince
  • 3 garlic cloves, crushed
  • 300ml tub light thickened cream
  • 125.00 ml finely grated parmesan
  • Finely grated parmesan, to serve
Instructions:
  • Boil spaghetti in a large pot of salted water as per package instructions. Add vegetables for the final 2 minutes of cooking. Drain and return to the pot.
  • Heat oil in a large frying pan over high heat, then add mince and season with salt and pepper. Cook for 4 minutes, breaking up the mince with a wooden spoon until well browned. Stir in garlic for 30 seconds, then add cream and parmesan. Cook and stir for 2 to 3 minutes until the cheese melts and the sauce starts to simmer.
  • Drizzle the sauce over the pasta and vegetables, delicately mix to ensure everything is coated. Sprinkle with parmesan before serving.
