Meatballs with spaghetti and flavorful tomato sauce, a satisfying midweek dinner.
Ingredients:
  • 650g veal mince
  • 350g pork mince
  • 1 medium brown onion, coarsely grated
  • 55g (3/4 cup) fresh breadcrumbs (made from day-old bread)
  • Salt & freshly ground black pepper
  • 45.50 gm olive oil
  • 27.30 gm olive oil
  • 1 brown onion, halved, finely chopped
  • 1 x 410g can crushed tomatoes
  • 185ml (3/4 cup) vegetable liquid stock
  • 44.40 gm tomato paste
  • 400g Cucina Matese Spaghetti Italian Pasta
  • 62.50 ml finely chopped fresh continental parsley
  • 40.00 ml finely shredded fresh basil
Instructions:
  • Prepare a baking tray with non-stick baking paper. In a large bowl, mix veal, pork mince, onion, breadcrumbs, garlic, and egg. Season with salt and pepper, then combine everything using your hands. Roll 1 heaped tablespoon of the mixture into a ball and place on the prepared tray. Repeat for the rest of the mixture.
  • 1. Heat a portion of the oil in a non-stick frying pan over medium heat. Cook a portion of the meatballs for 8 minutes until golden brown and cooked through. Transfer to a plate. Repeat with the remaining oil and meatballs in 2 more batches, ensuring the pan is reheated between batches.
  • Prepare the sauce: Heat oil in a large frying pan over medium heat. Sauté onions until soft for 3-4 minutes. Add garlic and cook until aromatic for 1 minute.
  • Add in the tomato, stock, and tomato paste. Increase the heat to high and bring it to a boil. Then reduce the heat to medium-low. Place the meatballs in a single layer and gently simmer, stirring occasionally, for 5-6 minutes until the sauce thickens and the meatballs are heated through.
  • Cook the spaghetti in a large saucepan of boiling salted water according to package instructions until al dente. Drain well and return to the pan.
  • Combine the parsley and basil with the tomato sauce, mix well. Season with salt and pepper to taste, then gently toss the mixture with the pasta until fully incorporated.
  • Portion out the spaghetti and meatballs into individual serving bowls. Enjoy while hot.
