Ingredients:
  • 1 pork rack roast (4 cutlets approx 1kg)
  • 2 garlic cloves
  • 1.25 gm ground cinnamon
  • Salt & freshly ground black pepper
  • 3 small golden sweet potato, peeled and cut into 7 x 3cm pieces (about 850g)
  • 4 medium parsnip, peeled and quartered lengthways
  • Olive oil spray
  • 40.00 ml fresh rosemary
  • 1 x 400g can diced Italian tomatoes with oregano and basil
Instructions:
  • Preheat your oven to 180°C. Trim the fat from the pork rack with a knife. Rub the roast with garlic cloves, then massage in cinnamon, salt, and pepper for a flavorful crust.
  • In a large roasting pan, arrange the roast, sweet potato, and parsnip. Drizzle olive oil over the vegetables, then sprinkle with rosemary, salt, and pepper. Roast for 30 minutes. Pour diced tomatoes over the vegetables and continue roasting for another 30 minutes or until the pork is cooked. Cover with foil, let it rest for 15 minutes, then serve.
