Budget-friendly roast pork for the whole family at only $3.90 per serving!
Ingredients:
  • 1.2kg easy carve pork leg
  • 13.80 gm olive oil
  • 2.40 gm sea salt
  • 8 (230g total) eschalots, peeled
  • 550g chat potatoes, halved
  • 4 (460g total) black diamond plums, stones removed, quartered
  • Steamed green beans, to serve
Instructions:
  • 1. Preheat the oven to a high temperature of 220°C/200°C fan-forced. 2. Arrange the pork in a spacious roasting pan. 3. Drizzle the pork with oil. 4. Sprinkle salt over the pork. 5. Season the pork with pepper. 6. Roast in the oven for 25 minutes until the skin is crispy and golden.
  • Lower the oven temperature to 200°C/180°C fan-forced. Toss eschalots and potatoes in the pan with the juices. Roast for 40 minutes until potatoes are nearly tender. Then add plums to the pan and continue roasting for 20 minutes, or until pork is cooked through and plums are tender.
  • Allow the pork to rest under a cozy cover for 10 minutes. Slice it up beautifully and present it with plums, potatoes, shallots, beans, and all those delicious pan juices.
