Indulgent crab-stuffed portobello mushrooms - a heavenly appetizer.
Ingredients:
  • 2 large portobello mushrooms
  • 1 (8 ounce) bottle Italian-style salad dressing
  • 1 tablespoon minced onion
  • 1.5 teaspoons minced garlic
  • 0.25 cup butter
  • 1 stalk celery, diced
  • 0.5 cup crab meat, fresh or canned
  • 20 buttery round crackers, crushed
  • 0.66666668653488 cup Italian blend shredded cheese, divided
Instructions:
  • Preheat your oven's broiler. Clean mushrooms, discard stems, and marinate caps in Italian dressing for 15 minutes. Transfer marinated mushroom caps to a baking dish.
  • Broil the dish at least 6 inches from the heat for approximately 10 minutes, checking intermittently to avoid burning. Next, turn off the broiler and preheat the oven to 400°F (200°C).
  • - In a skillet over medium-high heat, melt butter. Chop reserved mushroom stems and sautee with onion, garlic, and celery until tender. - Add crabmeat and cook for about 5 minutes until done. - Transfer mixture to a bowl and mix in crackers, 1/3 cup of cheese blend until well combined. Use Italian dressing marinade if needed to bind mixture. - Fill mushroom cavities with crab mixture. - Season with salt and pepper to taste.
  • After 10 minutes in the preheated oven, add the remaining cheese on top. Bake for an additional 3 minutes until the cheese is melted.
