Elevate your steak with a zesty Portuguese marinade of paprika, bay leaves, garlic, and vinegar.
Ingredients:
  • 2 dried bay leaves
  • 2 tsp red wine vinegar
  • 3.75 gm paprika
  • 2 garlic cloves, crushed
  • 45.50 gm olive oil
  • 750g Beef Fillet Steaks
  • 1 small brown onion, finely chopped
  • 1 green capsicum, finely chopped
  • 450g pkt microwave brown rice
  • 2 tomatoes, seeded, chopped
  • 82.50 ml parsley, finely chopped
  • Parsley leaves, to serve
Instructions:
  • In a glass or ceramic dish, mix bay leaves, vinegar, 1 teaspoon of paprika, minced garlic, and 2 tablespoons of oil. Season to taste. Add beef to the mixture and toss until well coated. Let it marinate for 30 minutes.
  • Heat the remaining oil in a saucepan over medium heat. Cook onion, capsicum, and leftover garlic for 5 minutes until onion softens. Sprinkle in the rest of the paprika and cook for 1 minute. Heat the rice according to the package directions, then add it along with the tomato to the pan. Stir and cook for 3 minutes. Season to taste and mix in chopped parsley.
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill the beef for 3-4 minutes on each side or until it reaches your preferred doneness. Place the beef on a plate, cover it with foil, and let it rest for 5 minutes before slicing it thickly.
  • Spoon rice mixture into individual bowls. Arrange beef on top and garnish with fresh parsley leaves before serving.
