Delicious griddled Azorean bread similar to English muffins from Titia Teolinda in Saint Michael.
Ingredients:
  • 1 (.25 ounce) envelope active dry yeast
  • 0.25 cup warm water
  • 6 cups all-purpose flour
  • 0.25 cup melted butter, cooled
  • 1.25 cups milk
Instructions:
  • In a small bowl, let the yeast bloom in warm water with a pinch of sugar. Allow it to ferment for about 10 minutes.
  • Pour the yeast mixture into a large bowl, then mix in the sugar, eggs, salt, flour, and milk until the dough forms. Mix in the melted butter, then transfer the dough to a floured surface and knead for 10 minutes until it's smooth and stretchy. Cover the dough with a cloth and let it rise until it doubles in size, around 45 minutes.
  • Divide the dough into 15 to 20 pieces and shape them into flat round cakes that are 1/2 inch thick. Place a floured cloth on the table and gently arrange the cakes, leaving room for rising. Let them rest and rise for 1 1/2 hours.
  • Place the cakes in a heavy, ungreased skillet over low heat and fry until golden on both sides.
