Portuguese Sopas: Flavorful pot roast and cabbage over French bread, a family favorite!
Ingredients:
  • 1 (3 pound) beef pot roast
  • 1 onion, diced
  • 1 cup fresh mint leaves
  • 2 cloves garlic, minced, or more to taste
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground allspice
  • 2 bay leaves, or more to taste
  • salt and ground black pepper to taste
  • water to cover
  • 1 head cabbage, quartered, or more to taste
Instructions:
  • In a large pot, combine pot roast, onion, mint, garlic, cinnamon, allspice, and bay leaves. Season with salt and pepper. Add enough water to cover the roast. Simmer over medium heat until the roast is tender, adding additional water if necessary, for approximately 4 hours.
  • Add cabbage wedges to the pot and gently mix in. Let it simmer until the cabbage is tender, approximately 30 minutes.
